· To ensure that all inventory movements within the hotel are accounted for and are properly
supported with appropriate documentation.
· To ensure the implementation of all cost control policies and procedures by all departments.
· To prepare and issue various cost reports as required by Management

· To verify that officer checks (duty meals), F&B entertainment checks are processed according
to the procedure and to prepare a daily entertainment report
· To cost all recipes, inter-kitchen transfers and any food and beverage consumed by the hotel
employees (staff meals).
· To define minimum and maximum stock levels, par stock management systems and to ensure
the compliance with the relevant departments.
· To ensure all goods received and delivered in and out of the hotel stores are properly
documented and accounted for.
· To perform daily and monthly Food and Beverage reconciliations, using POS-generated sales
analysis reports and ensuring that all discrepancies are explained.
· To perform the physical count of all storeroom stocks and month-end inventory, with final
balances to be reconciled with the general ledger month-end balance.
· To report the daily and monthly F&B costs with emphasis and detailed analysis on exceptional
variances such as trend of cost of sales ratios, slow moving items, breakage & loss, etc…

• Ensure accurate menu costing and pricing of all new menu, evaluate standard recipes and determine its potential cost.
• Work with F&B in menu costing, pricing, testing, planning.
• Perform physical count of beverage stocks at F&B outlets and beverage store.
• Ensure accurate month end inventory are recorded and reconciled with general ledger.
• Oversee Receiving to ensure that the control policies and procedures are followed. Ensure proper record keeping of inventories.
• Check Market List, Receiving Record, Costing List to ensure the effectiveness of the control system.
• Make suggestions for possible improvement in cost control procedures

• Improve project process by developing and implementing cost structure, then manage job-specific code of accounts for WBS approvals.
• Manage treasury, open several new accounts, establish new procedures and controls, monitor daily activity.
• Prepare monthly write-ups reports for the cost performance and EAC forecast
• Identify wrongly charge WBS in order to control the budget release under each WBS element.
• Facilitate capital project team's operating expense budgets, forecast, variance comments, accruals, and reporting.
• Analyze purchase order commitment to calculate accruals.
• Perform weekly/periodic physical inventory reconciliations.
• Participate in the development of unit standard costs and BOM's for new and existing products.
• Evaluate engineering change releases to determine applicable component level changes base on each specific vehicle's BOM features and options.
